David again… and of course I love honey and I love ice cream so MUST. MAKE. and the print shop is conveniently/dangerously near to the Beekind shop which has a wall of honey – and you can taste them! – and they had two chestnut honeys, both from Italy, not sure how they have the corner on the market, I went with the Ritrovo Selections Raw Chestnut Honey. They also have buckwheat honey, which was another type David suggested. I did end up adding a bit more after the base chilled, and oh yummyyummyyum!
