Fresh Apricot-Cheesecake Ice Cream with Blueberry Swirl

It started with the apricots – it has to start somewhere, and that’s as good a place as any – looking and smelling so good at the farm stand. Then cheesecake crept into the picture, I’m not quite sure how or why, although… does cheesecake really need a reason? Then to top it off, Trader Joe’s has been having the big boxes of blueberries and yes, some of them actually make it all the way home. I thought the blueberries would turn it up to 11, but they actually went a little icy. Still great flavor combo, and the apricot and cheesecake were, as suspected, quite nice together, but if I were to do it again I wouldn’t mix and freeze the blueberry in, but leave it as sauce and top the ice cream with it.
